For the buttercream, mix together icing sugar, butter, cocoa powder, milk and peppermint extract. Place the first sponge onto your cake stand, cake board or plate and pipe or spread some buttercream on top of it. And finally, you would need an egg replacement. Try one of the following alternatives (each = 1 egg, so multiply as needed for any given recipe).

I prefer to melt the chocolate, butter and golden syrup in the microwave. I melt for short bursts and make sure I stir thoroughly in-between. To make it vegan, use dairy free margarine instead of butter. I would simplify the ingredients to dark chocolate orange which is vegan and vegan marshmallows.

You can freeze your undecorated sponges in an airtight container or bag for up to two months. However, I wouldn’t advise freezing your completed Matchmaker cake as the cream in the ganache will most likely split as it defrosts. What is the best way to defrost Matchmaker cake? As you continue to stir, it will melt fully without that risk of splitting. If you have a hand whisk or stand mixer you can use this to bring the cookie dough together, but it's not essential - a classic bowl and spoon will work just fine.

These dates are calculated with the storage in mind. So as long as you have stored your egg in the fridge, the Best Before End Date will be accurate. However, if you’ve kept your eggs on the counter your eggs may have gone off before this date. So if you use them, you should use them with caution.
