I see the guys at Holyrood distillery make 3 different gins but using always the same 3 ingredients (juniper, sea salt and beeswax). Primarily whisky makers, Holyrood Distillery created Height of Arrows Gin with the simplicity of whisky in mind, where they work with just barley, water and yeast.This bright gin only needs a small splash of tonic, around 1 part gin to 1 part tonic with a sprig of rosemary or a citrus twist. Nose: The higher ABV and increased botanical mass really jump out the glass, with big aromas of piney juniper and zesty citrus, the latter of which are more prominent than in Original. We use salt as a natural flavour enhancer, marrying with juniper to impart a further depth of flavour.

The only differences are the ratios of botanicals and for Heavy, the addition of sugar after distillation to create an Old Tom style gin.From the Holyrood Distillery, near to Arthur’s Seat, comes a gin that takes its inspiration from that famous volcano.
