When it comes to slicing pasta sheets into individual noodles, the Atlas 150 comes with a two-in-one cutter. You can make wide fettuccine or narrow tagliolini by feeding the dough sheet through one slot or the other. Cutting is as smooth as rolling with this machine, and it sliced fettuccine beautifully. Its tagliolini also came out mostly separate, though there were a few strands we had to pull apart by hand. (Most pasta machines come with a cutter for spaghetti rather than tagliolini. The two noodles are the same size, but tagliolini are flat and spaghetti are round. If you absolutely must have spaghetti, you can buy a separate spaghetti attachment.) There are many different brands of pasta machine on the market, and nearly all of them work the same basic way: A pair of adjustable rollers compresses dough into thinner and thinner sheets, and then a rotary cutter slices the sheets into noodles. You use a removable hand crank to turn both rollers and cutter, and you can swap out different cutting units to get pasta of different shapes and sizes.
